About Vulcan Cooktop Repair
Ask about a Vulcan cooktop and you're really asking about countertop gear. That means griddles, where gas or electric heat sits under a heavy steel plate; charbroilers, with radiants and grates above each burner; and hotplates with open flames. Set on stands along the line, they run all shift under constant grease. Gas units often have standing pilots, and griddles usually get a thermostat per zone.
Uneven heat on a griddle is the call we get most. One zone runs cool because its burner is partly clogged, its pilot has weakened, or its thermostat has drifted out of calibration, and carbon built up on the plate makes any cold spot worse. A surface thermometer tells the story: once the griddle has preheated, check several spots across each zone and compare the readings with the dial settings.
Charbroilers decline more gradually. Grease fouls the burner ports and coats the radiants, the flame pattern gets patchy, and flare-ups become more frequent and more intense. Staff can clean grease troughs and drip trays daily, scrape the griddle plate the way the manufacturer specifies, and pull and clean charbroiler radiants and grates where the manual allows it.
Pilots are the common thread across all three types. When a pilot orifice clogs, the flame shrinks, no longer heats the thermocouple enough, and the safety valve shuts gas to that burner. If a pilot won't stay lit after a normal relight attempt, don't keep trying. Electric griddles raise different questions entirely, and on those we test the elements and thermostats instead.
When we arrive we watch every flame, clear or swap plugged orifices, measure thermocouple millivolts, confirm the safety valve holds, and check each griddle zone against a surface thermometer. Vulcan designs this gear for service, so repairs usually make economic sense. A warped griddle plate or a badly corroded body is when replacing the unit may be the better call.
Where Vulcan Cooktops Tend to Fail
- Griddle zone thermostat out of calibration, hot and cold spots
- Charbroiler burner ports and radiants fouled with grease
- Clogged pilot orifice letting the thermocouple drop out
- Carbon on the griddle plate slowing heat transfer
