Traulsen Commercial Refrigeration Repair for Tampa Kitchens

Traulsen has made commercial refrigeration since the 1930s. It started in New York, builds in Texas today, and belongs to a major food-equipment group. Its stainless cabinets are among the heaviest you can buy and are made to take constant door traffic.

The catalog covers reach-ins and roll-ins, pass-thru models that load from one side and unload from the other, dual-temp cabinets, undercounters and prep units, plus blast chillers. Owners expect years of service from them, so the typical question is how to keep one running, not whether to scrap it.

On many Traulsen reach-ins, the whole refrigeration package sits on the roof of the cabinet. The coil stays clear of floor dust, flour and mop water, and the full interior is free for product. The downside is that the condenser pulls air from just under the ceiling, the warmest spot in any kitchen.

Grease rises too, so a top-mount coil near the fryers can foul faster than owners expect, and because cleaning it takes a ladder, it often gets skipped. Cases stacked overhead, a low soffit or hood heat spilling over can choke the airflow. Our inspection always includes the few feet above the cabinet.

By July, the air near a Tampa kitchen ceiling is brutally hot, and that is the air a top-mount Traulsen uses to reject heat. A cabinet that holds temperature easily in January can fall behind in August, particularly with a dirty coil. Hurricane season adds outages and surges. When power comes back, make sure the controller reads normally and the box pulls down to temperature before you restock. Finding a damaged control with an empty cabinet beats finding it with a full one.

Evaporator fans run almost around the clock and eventually burn out, leaving a warm box with a compressor that never stops. The heavy doors wear gaskets, hinges and self-closers, and one that fails to swing shut can leak cold for an entire shift. Freezers add defrost heaters, defrost termination and drain-line heaters to the list.

Controls can lose their settings or fail after a power hit, and probes drift. A blast chiller depends on a food probe plus a program that ends by time or by core temperature, so a bad probe can make it look slow while the refrigeration is healthy. We test the probe before going near refrigerant.
